Traditional does not always mean meat or fish

Focaccia, farinata made from chickpea flour, vegetable pies and many pasta preparations can provide strong options. Pesto traditionally contains cheese, so vegans should ask whether a dairy-free version is available. Filled products may contain egg, cheese or anchovy even when vegetables dominate the name.

Use clear questions

“Sono vegetariano/a” means “I am vegetarian”; “Sono vegano/a” means “I am vegan.” Ask “Contiene formaggio, uova o pesce?”—does it contain cheese, eggs or fish? Explain allergies separately and never assume the same preparation method in every kitchen.

Plan for late hours

Small village kitchens may close between services and choice becomes thinner late at night. Save several options near your base and carry a simple snack on travel days. La Spezia and Levanto generally provide broader supermarket and restaurant choice.

Supporting a kitchen that adapts honestly is better than demanding a complex off-menu dish during peak service. Confirm ingredients politely and enjoy the foods that are naturally simple.
